I stopped using bottled dressing years ago and realized it’s so easy to make incredible salad dressings without preservatives. Here’s one that was inspired by the incredible taste of tarragon and French cooking.
1/2 cup Olive Oil
1/4 cup Red Wine Vinegar
1/2 tsp Dijon Mustard
1/2 tsp honey
1/2 garlic clove minced
1/2 tsp shallot chopped
1 Tbsp fresh tarragon chopped fine or 1/2 tsp dried
Fresh grated or shaved Parmesan to taste (optional)
Dash of pepper and salt to taste (optional)
Whisk in a bowl or shake in a jar
Lightly drizzle on your favorite delicate baby greens (spring mix or Boston lettuce)
Bask in the freshness,
