Strawberry Vinaigrette

There’s nothing like some fantastic fresh greens in a salad on a wonderful spring day.  Even better yet, some freshly made dressing to top it off.    Joan and I have been talking about tinkering with many different varieties of dressings.  Today I was inspired.  I had a fresh batch of strawberries and it was Mother’s Day.  What more does one need to create a dressing worthy of Mom’s approval?

Today my Strawberry Vinaigrette was born.  It was paired with baby Romaine, cucumber, Roma tomato and small cubes of cheddar cheese.

 

½ cup olive oil

1/8 cup balsamic vinegar

¼ cup water

10-12 strawberries chopped fine

¼ tsp fresh tarragon chopped

Pepper to taste

Mix all ingredients together and refrigerate for at least an hour.  Drizzle over your favorite baby greens: spinach, romaine, etc.  Add some extras:  Roma tomatoes, cucumber, carrots, nuts, and/or seeds.    Don’t be afraid to throw in some chicken or shrimp if you want more of a “grown up” salad or keep it completely vegetarian.  No matter what, mom will love it.

Of course I loved the leftovers, which made a great salad for lunch on Monday.
